Lemon Muffins

Happy Friday everyone! Today is my day off so I wanted to get into my kitchen and bake. We have guests coming to stay with us for the weekend so I thought about muffins. Muffins are great as a snack or for breakfast, very versatile. I didnt want to make banana nut or blueberry, I wanted something new. So I found a lemon muffin recipe and decided to give them a try. My husband loves any dessert made with lemons, and my mom does as well.  Perfect!


These muffins are awesome! Super moist and light with a rich lemon flavor. The muffins alone are perfectly fine, but the icing puts them over the top. The icing makes the muffin. I also sprinkled a little powdered sugar over the top to give it that extra something. We didnt even wait until they cooled down to eat one. Delicious! If you need a great brunch or breakfast idea, make these.




Lemon Muffins
recipe from Southern Living

3 cups flour
1 cup sugar
2 1/2 tsp baking powder
1/2 tsp salt
2 eggs
1 1/4 cup milk
1 stick butter, melted
1 tbsp lemon zest

Whisk together the flour, sugar, baking powder, and salt in a large bowl. Whisk together 2 large eggs,
1 1/4 cup milk, melted butter, and lemon zest. Stir the wet ingredients into the dry ingredients just until moistened. Spoon into a lightly greased 12 cup muffin tin, filling 2/3 full. Bake at 350 degrees for  25 to 30 minutes.

Icing

1 cup powdered sugar
1 1/2 tbsp fresh lemon juice

Stir the powdered sugar and lemon juice together. Drizzle over the warm muffins.
