Kale + Ground Chicken + White Bean Soup



My go to dinner in the fall has always been soup. Warming, comforting, and hearty soup. So with that being said, last night my best friend since childhood came over for dinner, and she has lost a lot of weight over the last two years and is trying to maintain her healthy lifestyle. I am so proud of her. I wanted to make her something that was hearty, healthy, and delicious. This soup was that and so much more. We all enjoyed it, kids included. Definitely a keeper. Kale + Ground Chicken + White Bean Soup

1 lb organic ground chicken
1 medium white onion, finely chopped
3 gloves garlic, finely chopped
1 tablespoon olive oil
1 can diced tomatoes with juices
1 can white beans ( I use cannellini beans), drained and rinsed
2 cups chicken stock
1 bunch kale, cut up and stems removed
salt and pepper
1/8 teaspoon crushed red pepper flake

In a large soup pot, over medium-high heat, add in the olive oil. Add the ground chicken to the pot and cook until done. Drain the small amount of excess grease and put chicken back into the soup pot. Add in the onions and saute until tender, about 6 minutes. Add in the garlic and saute for 3 more minutes. Add in the diced tomatoes, white beans, and chicken stock. Bring to a boil then add in the kale by handfuls, stirring after each addition. Add in about 1 tablespoon kosher salt, 1 teaspoon black pepper, and the crushed red pepper flake. Turn heat down to medium-low and let simmer about 15 minutes, stirring occasionally. Top with freshly grated parmesan cheese and serve with crusty bread.
