After School Treats

We took my youngest daughter, Kristin, to get her glasses after school today. She took having to wear them surprisingly well. She looks so grown up, it's hard for me to believe she is 5 years old. I decided to make the kids some after school treats in honor of Kristin's new look. She really does look like her big sister, Kaile. Both the girls were born in October and are only 11 months apart. The kids came home and we made no bake oreo cheesecakes in a jar, and then we made peanut butter granola bars.

No Bake Oreo Cheesecakes in a Jar

About 15 Oreo cookies, roughly chopped
8 ounces Low-Fat cream cheese, room temperature
¾ cup granulated sugar
1 teaspoon vanilla extract
8 ounces Low-Fat Cool Whip
About 8 4-ounce quilted jam jars
1. Coarsely chop the cookies and set them aside.
2. In an electric mixer fitted with the paddle attachment beat the cream cheese, sugar, vanilla and set aside. Gently stir in the Cool Whip and 3/4′s of the chopped cookies.
3. Scoop even amounts of the mixture into the eight jars. Top each one with a little bit of the remaining chopped cookies. Screw the lids onto the jars and refrigerate them for at least four hours, or until firm.
 Peanut Butter Granola Bars

  • Vegetable cooking spray
  • 1 egg white
  • 1/2 cup smooth peanut butter
  • 1/3 cup brown sugar
  • 1/4 cup honey
  • 1/2 cup (1-stick) unsalted butter, melted
  • 2 cups old fashioned oats
  • 1/3 cup semi sweet chocolate chips

Directions

Position an oven rack in the middle of the oven. Preheat the oven to 350 degrees F.
Spray a 7 by 10 3/4-inch nonstick baking pan with vegetable cooking spray. Lay a 6 by 18-inch piece of parchment paper in the pan, allowing the excess paper to hang over the sides. Spray the parchment paper lightly with cooking spray.
In a medium bowl, using a hand beater, beat the egg white until frothy. Stir in the peanut butter, brown sugar and honey. Add the melted butter and oats. Stir to combine, then add the chocolate chips.
Using a rubber spatula , spread mixture into the prepared baking pan, pressing lightly to form an even layer. Bake until the edge of the mixture begins to brown, about 15 minutes. Remove from the oven and let cool for at least 1 hour. Cut into 1 1/2-inch squares and serve.
