Creamy Lemon Oat Bars

I have been making so many things with chocolate in them, so today, I decided to change things up a bit
and make something using my fresh lemons. I browsed the internet for inspiration and came across the Creamy Lemon Bar recipe. One of the ingredients is sweetened condensed milk, so I was immediately sold on making these even if it were just for that reason. I love sweetened condensed milk, you can make so many great recipes with it. I made them a few hours ago, and they turned out very very well. They were very simple to make, and the crust is like heaven in your mouth. You will just have to make them and see for yourself. Have a great evening everyone. 



Creamy Lemon Oat Bars

1 can sweetened condensed milk
3 tsp grated lemon zest (about 1 lemon)
1/4 cup fresh lemon juice
1 stick of unsalted butter, softened
1 cup old fashioned oats
1/2 cup packed brown sugar
1 1/4 cup flour
1/4 teaspoon salt
1/4 teaspoon baking soda

Preheat oven to 350 degrees. Spray a 8x8 pan with cooking spray and set aside. Mix together the lemon zest, lemon juice, and milk until thick, then set aside. Combine the rest of the other ingredients in a mixing bowl until crumbly. Then pour half of the crust into the pan evenly and press gently. Put the crust into the oven for about 10 minutes, then remove. Pour the lemon filling over the crust evenly. Then pour the remaining half of the crust on top of the lemon mixture, then press gently. Place back in the oven for another 20 minutes or until edges are golden brown. Cool completely, then cut and serve.
