Homemade Egg Drop Soup + Chicken Fried Rice


























Do you ever have a craving for Chinese food, but don't want to leave the house to get it? We live in a rural area and delivery isn't an option so we have to go pick up any food we order. Last night I didn't want to go out to dinner so I decided to make my own Egg Drop Soup and Fried Rice. I found a great recipe on the internet for the soup and made my own Chicken Fried Rice. I was very pleased with the results of both. Give them a try the next time you have a craving for Asian food.


Homemade Egg Drop Soup

5 1/2 cups chicken broth
2 tsp minced garlic
1 teaspoon kosher salt
1/2 teaspoon white ground pepper
3 eggs, well beaten
2 green onions, thinly sliced

Pour broth into a pot, add garlic, salt and pepper and bring to a simmer. Allow mixture to simmer for about 10 minutes. Turn heat to medium and then slowly drizzle eggs into the broth in a thin stream. Slowly stir in the green onions. Ladle into bowls and serve. You may garnish with more green onions and cracked black pepper.

Chicken Fried Rice

2 boneless skinless chicken breasts, cut into bite size pieces and cooked
3 cups cooked white rice
3 tablespoons sesame oil
1 cup each of frozen peas + carrots, thawed
1 small white onion, chopped
2 teaspoons minced garlic
2 eggs, slightly beaten
1/4 cup soy sauce

On medium high heat, heat sesame oil in a large skillet or wok. Add peas, carrots, onions, and garlic. Stir fry until tender. Lower the heat to medium-low and push the mixture to the side, then pour your eggs on the opposite side of skillet and stir fry until scrambled. Now add cooked chicken, rice, and soy sauce and blend together well. Stir fry until heated thoroughly. Serve and enjoy!
