Baked Peaches + Cinnamon + Honey + Vanilla Sugar



Since the beginning of summer we have eaten so many peaches, so many different ways. I have made peach dump cake, peach cobbler, peach crumble, and even grilled peaches. I still had five peaches leftover from the last trip to the farmer's market, and I didn't want them to spoil so I decided to bake them. I used organic raw honey and sugar to bring out their natural sweetness and to cut out any acidity. They were delicious and a perfect way to use the last of our peaches.

Baked Peaches + Cinnamon + Honey + Vanilla Sugar

5 peaches halved and pit removed
3 tablespoons of honey
1 teaspoon vanilla bean paste
2 tablespoons butter
1 tablespoon vanilla sugar
1 tablespoon cinnamon

Place the peaches in a 2 quart baking dish. In a small bowl mix,together the honey and vanilla bean paste, drizzle the honey mixture over the peaches. Cut the butter into pieces and place on top of the peaches. Mix together the cinnamon and vanilla sugar and sprinkle over the peaches. Bake at 350 degrees for 30 minutes. Serve alone or with vanilla ice cream.
