Easy Strawberry Tart

Happy Memorial Day! I thought this recipe was perfect for today's post. It is a great dessert for a summer party, and the colors are so pretty and patriotic. I bought 2 sets of these blue and white towels at Ikea this weekend for 1.99, that is a steal. The towel made a perfect backdrop for this dessert. Enjoy!

Easy Strawberry Tart
adapted from Nigel Slater

1 frozen puff pastry sheet, thawed
1 cup heavy cream
2 tablespoons sugar
1 cup strawberries, halved

Preheat oven to 400 degrees. Unfold the puff pastry on a parchment lined baking sheet. With a knife, score a 3/4 inch border around pastry. Transfer to oven and bake about 15 minutes. Using parchment, transfer pastry to a wire rack to cool completely, about 15 minutes. In a medium bowl, using an electric mixer set on  medium speed, beat cream and sugar together until stiff peaks form. Spread whipped cream evenly over the pastry, up to scored border. Dot with strawberries.
