Ultimate Fudge Brownie Sundae



While in New Orleans we ate at Copeland's Cheesecake Bistro and Grill, they are famous for their cheesecakes but they have other amazing desserts. The kids ordered a brownie sundae for dessert and ate every last bite. They kept telling me how good it was so tonight I decided to make my own version for them. My version was a huge success and much cheaper. Once again, the entire brownie was gone within a matter of minutes. I love the way the smell of brownies baking in the oven consumes your entire house. The fragrance is intoxicating. This recipe is really simple and isnt at all time consuming. I think these would be great served at a kid's birthday party or even a casual dinner party. You can dress these up in so many different ways, the possibilities are endless. You could even assemble the brownies and then let the kids or adults add whatever toppings they wanted. Make it a brownie/sundae bar. Lots of fun to be had!

Brownie Ice Cream Sandwich

1 stick melted unsalted butter
1 cup sugar
2 large eggs
1/2 teaspoon salt
1/2 cup all purpose flour
1/2 cup unsweetened cocoa powder
2 pints of ice cream

Whipped Topping


2 tablespoons sugar
1 cup heavy cream

Preheat oven to 350 degrees. Butter a 10x15 inch jelly-roll pan. Line with parchment, leaving a 2 inch over-hang on short sides, then spray or butter paper.

In a medium bowl, whisk together the melted butter and the sugar, then whisk in eggs and salt. Add flour and cocoa and mix just until smooth. Spread in pan. Bake until brownie is dry to the touch and edges have begun to pull away from the pan. 10 to 12 minutes. Let cool 5 minutes. Using paper over-hang, transfer to a wire rack and let cool completely. Transfer brownie onto a work surface and cut in half crosswise. Cut into 12 squares. Add a scoop of ice cream to one brownie, then place the other brownie on top. To make the whip cream, beat the heavy cream and sugar until stiff peaks form. Drizzle chocolate syrup over the brownie, and then add a dollop of whipped cream. Sprinkle a few walnuts on top of the brownie and enjoy.
