I hope everyone had a great weekend. Mine went by way too fast, as it always does. Yesterday morning was spent deep cleaning the house, and going through boxes of halloween/fall decorations. We went out to dinner last night, then came home and relaxed. I wanted to accomplish much more but I ran out of time.
So today was spent being with my family and baking. Two of my favorite things to do. I found a new recipe on Pinterest for cookies. The recipe is a keeper. I loved how chewy and moist they were. I made white chocolate chip peanut butter cookies. They are a cross between peanut butter and oatmeal cookies. They are delicious.
I also made vanilla cupcakes with vanilla bean buttercream frosting. The buttercream frosting turned out very well. I am so proud of myself for making these. This is only my second time to make buttercream frosting from scratch. I am pleased with how these turned out. I love buttercream. I licked more frosting off of the spoon than my kids. Buttercream Frosting

3 cups powdered sugar
2 tablespoons milk, at room temperature
1 stick of butter, at room temperature
1 tsp vanilla bean paste
In the bowl of an electric mixer, fitted with the flat paddle attachment, add the powderd sugar, butter, milk, and vanilla bean paste. Mix on low for 1 minute. Then beat on medium speed for three to four minutes until fluffy.
