Mini Apple + Bourbon Hand Pies



Ok I have to admit I have gotten a little carried away with apple desserts this fall. I have made an apple pie of some kind at least once a week since fall began. In my house you can never have too much apple anything, when you walk into the kitchen the first thing you see is a big white bowl of granny smith apples. Delicious! These little pies are addictive I tell you, just addictive! They are flaky, tart, and sweet all in one little bite. You will also be amazed at how simple they are to make. These mini pies would be perfect for a fall gathering or even a tailgating party. Have a great evening everyone and thank you so much for taking the time to visit the blog!

Mini Apple +  Bourbon Hand Pies

3 granny smith apples, peeled and diced
1/4 cup butter
2 tablespoons flour
1/2 cup brown sugar
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
1 tablespoon bourbon

You can find the recipe I use for crust here. I make 2  pie crusts for this recipe.

Preheat the oven to 350 degrees. Line a baking sheet with a silpat liner or parchment paper to prevent sticking. Place the apples, flour, brown, sugar, granulated sugar, cinnamon and nutmeg in a large bowl and use a wooden spoon to coat and combine ingredients. Melt the butter in a medium size skillet over medium heat. Add in the apples with the sugar mixture and saute for about 5 minutes. Add in the bourbon and cook for about 5 minutes longer or until the mixture has thickened slightly. Using a biscuit cutter or glass, cut circles into your pie dough and place 6 of them on the baking sheet. Add a small amount of the apple mixture ( about a teaspoon full) and then place another piece of the cut dough over it and press the edges together with a pie crimper or fork. Cut three small slits in the crust to vent . Repeat with remaining crust and filling until gone. Bake for 15 minutes or until tops of pies are golden brown.
