Apple Pie Bites



Yesterday, I received my package from Everyday Occasions, a blog and shop created by the lovely and oh so talented Jenny Steffens Hobick. One of the items in my package was the beautifully rustic apple basket pictured above, The moment I saw it I was inspired. I also knew it would make a lovely prop for a photograph, so I thought of a dessert that would look lovely alongside the basket. Isn't it funny how something so simple can inspire something wonderful?  Enjoy, and have a wonderful afternoon.


Apple Pie Bites

16 puff pastry cups, thawed and prepared as directed
1 granny smith apple, peeled, cored, and diced
2 tablespoons butter, melted
1 tablespoon granulated sugar
1 teaspoon apple pie spice or 1/2 teaspoon cinnamon combined with 1/2 teaspoon ground nutmeg
salted caramel sauce, either homemade or store bought, optional
vanilla ice cream (optional for serving)

Bake puff pastry cups as directed. Then combine diced apples, sugar, melted butter, and apple pie spice in a small oven safe bowl. Place in a 425 degree oven for about 20 minutes, or until apples have softened. Remove from oven . Place about 1 tablespoon of the apple mixture into each pastry cup. Then using a small cookie scoop, or melon baller top with vanilla ice cream, salted caramel sauce, and a sprinkle of cinnamon. Serve immediately.
